Cool fermentation maintains the aromatic profile and minerality, while some aging sur-lees (on yeast lees) gives some texture and complexity on both the nose and palate. The secret to the wine’s quality is the careful selection of two high quality vineyards and the careful blending of the two parcels to balance each of their specific characters harmoniously.
Black Cottage Sauvignon Blanc
